Harvey’s Skewers
Serves 4-6
- 12-16 bamboo skewers
- 1½ -2 cups rice
- 500g lean beef or chicken breast trimmed of fat and sliced into small chunks
- ¼ cup sweet chilli sauce
- ¼ cup soy sauce
- 1 tsp crushed garlic
- 1 red capsicum, cut into chunks
- 2 medium zucchini, cut into chunks
- 6-8 button mushrooms
- ½ cup pineapple pieces, drained
- 6-8 cherry tomatoes
Cook rice. Place sliced beef or chicken in sauces and garlic. Leave for 10-15 minutes. Thread the vegetables and beef or chicken onto skewers in alternating order. Turn the grill plate on and place the skewers on the plate, cook for 5 minutes or until beef/chicken is cooked through. Serve with rice.
