Harvey's Skewers

Harvey’s Skewers

Serves 4-6

  • 12-16 bamboo skewers
  • 1½ -2 cups rice
  • 500g lean beef or chicken breast trimmed of fat and sliced into small chunks
  • ¼ cup sweet chilli sauce
  • ¼ cup soy sauce
  • 1 tsp crushed garlic
  • 1 red capsicum, cut into chunks
  • 2 medium zucchini, cut into chunks
  • 6-8 button mushrooms
  • ½ cup pineapple pieces, drained
  • 6-8 cherry tomatoes

Cook rice. Place sliced beef or chicken in sauces and garlic. Leave for 10-15 minutes. Thread the vegetables and beef or chicken onto skewers in alternating order. Turn the grill plate on and place the skewers on the plate, cook for 5 minutes or until beef/chicken is cooked through. Serve with rice.
